Lemon Squares

Directions

  1. In a medium mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.
  2. Add the 1/4 cup sugar, beat until combined
  3. Beat in the 1 cup flour slowly, until crumbly
  4. Press mixture into the bottom of an ungreased 8x8 baking pan
  5. Bake in a 350 degree oven 15 minutes, or until just golden
  6. Meanwhile, for filling, in a small bowl, combine eggs, the 3/4 cup sugar, the 2 tablespoons flour, lemon zest, lemon juice, and baking powder. Beat 2 minutes, or until combined.
  7. Pour filling over the baked layer. Bake 20 minutes more, or until lightly browned around edges, and center is set.
  8. Cool on a wire rack, and dust with powdered sugar.
  9. Cut into squares.
  10. Eat.
  11. Duh.
