Cowboy Caviar

- 1 (15 ounce) can black-eyed peas, rinsed and drained
- ¼ cup thinly sliced green onions (2 or 3)
- ¼ finely chopped red bell pepper
- 2 cloves garlic, minced
- 2 tablespoons oil (olive oil, veg oil, whatever)
- 2 tablespoons cider vinegar
- 2 fresh jalapeno peppers, seeded, deveined, and
chopped
- ¼ teaspoon cracked black pepper
- ¼ teaspoon salt
Directions
- In a bowl, combine all ingredients.
- Cover and chill overnight.
- Serve with crackers or tortilla chips
- Tastes best at room temperature, so pull out of fridge an
hour before serving for a party.
