Berry Sauce

This goes great with new
york style cheesecake.
Ingredients
- 1 small jar strawberry jam or preserves (NOT jelly)
- 1/3 cup white sugar
- 2 lbs. fresh or frozen berries
- 2 teaspoons lemon juice (or 1 tablespoon lime juice)
- 1/2 teaspoon salt
Directions
- If you're using fresh berries, clean them, place in a large
bowl, and mix with the sugar
- Over medium-high heat, melt the jam in a sauce pot; let it
boil until the top no longer appears white and frothy, stirring
regularly
- If using frozen berries, stir in the sugar
- Add the berries at this point (fresh or frozen)
- Carefully stir the sauce until the berries are completely
incorporated
- Turn heat down to medium, and simmer for five minutes (up to
15 minutes for a thicker sauce), stirring occasionally to prevent
burning
- Turn off stove; let the sauce cool in the pot for 15 to 30
minutes
- Refrigerate sauce until cold before serving on cheesecake,
or serve hot over icecream, etc. The cooler it gets, the
thicker it gets.
