Berry Sauce

This goes great with new york style cheesecake.

  1. If you're using fresh berries, clean them, place in a large bowl, and mix with the sugar
  2. Over medium-high heat, melt the jam in a sauce pot; let it boil until the top no longer appears white and frothy, stirring regularly
  3. If using frozen berries, stir in the sugar
  4. Add the berries at this point (fresh or frozen)
  5. Carefully stir the sauce until the berries are completely incorporated
  6. Turn heat down to medium, and simmer for five minutes (up to 15 minutes for a thicker sauce), stirring occasionally to prevent burning
  7. Turn off stove; let the sauce cool in the pot for 15 to 30 minutes
  8. Refrigerate sauce until cold before serving on cheesecake, or serve hot over icecream, etc. The cooler it gets, the thicker it gets.
